Ingredients – Pineapple Upside Down Cake
Upper Layer:
- ¼ cup (½ stick) unsalted butter, melted
- ½ cup brown sugar, packed
- 1 can (20 oz) pineapple slices in juice, reserving juice for cake
- 1 jar (10 oz) maraschino cherries, seedless
Cake:
- 1 1/3 cups all purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¼ cup (1/2 stick) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- ¼ cup sour cream
- ¼ cup pineapple juice

Preheat oven to 350 degrees F.

For the topping: Melt butter in a microwave safe bowl and stir in brown sugar until smooth.

You can use fresh pineapple if you prefer, but you’ll still need fresh pineapple. You can also use yellow cake mix if you don’t want to make the batter yourself. Duncan Hines also has a pineapple upside-down cake mix.
To serve this cake upside down, make sure you let it cool before inverting it. If any fruit falls off the top of the cake, you can put it back. No one will know!
Make sure you use brown sugar, white sugar won’t taste as good. It won’t have that caramel note. Light brown sugar is fine, but I like dark brown sugar best.
